Ingredients
2 - 29 oz. cans regular cut yams in syrup (drain and reserve about 1/2 cup syrup)
1 - 31 oz. cans S & W brand old fashioned candied yams (drain and reserve about 1/3 cup spiced syrup)
1/2 cup orange juice
Miniature marshmallows
Instructions
Mash yams with reserved liquids (syrups and orange juice) with an electric mixer, a little bit at a time. Taste and add extra syrup and/or orange juice if needed. Divide mixture into three 9" ungreased pie tins. Bake at 350 degrees uncovered for 20 minutes (25 minutes if mixture has been refrigerated). Top with a layer of marshmallows and bake 10 more minutes (watching to make sure the marshmallows don't burn).
Mel's Notes
I couldn't find candied yams, so I ended up making those from a recipe, to replace the can of candied yams. In retrospect, I might just make the candied yam recipe by itself in the future. When sampling the homemade candied yams, they were sweeter and more flavorful prior to mixing with plain syrup yams, and 3 pans is a lot of yams.
Notes from Mom
This is a very fast and easy recipe. The problem is that it makes three pie tins full! This could be a good dish to make if you have a potluck. Just get three disposable foil pie pans.
You can fill the pie tins in advance, cover them with plastic wrap, and put them in the refrigerator. Then cook them right before you need them.
Love,
Mom
