Baked Egg Cups

Ingredients

1 package of 48 square wonton wrappers

2 dozen large or extra large eggs

Melted butter (at least 1/2 stick)

Cooked bacon

Finely chopped vegetables

Shredded cheese of your choice and/or Parmesan cheese

Salt

Pepper

Instructions

Preheat oven to 375 degrees. Brush cups of two muffin pans with melted butter. Press a wonton wrapper into each cup. Brush each wonton with melted butter. Press a second wrapper into each cup, lining them up so that each cup has eight wrapper points facing up. Brush the wrappers again with melted butter. Carefully slide a raw egg into each cup. Sprinkle each egg with salt and pepper. Tope each egg with your choice of crumbled cooked bacon, smoked salmon, chopped red bell pepper, etc. Sprinkle each topped egg with shredded cheese. Bake 10 to 15 minutes, until the egg is cooked through. Then, with the oven door ajar, broil the tops for another minute.

Notes from Mom

Here is the recipe for baked egg cups. It is good for a party because it makes 24. You can cut the recipe in half, but you will have leftover wonton wrappers. Maybe you could freeze the leftover wrappers. You need a basting brush to make these. They sell them at Marshalls or on Amazon.
